These are such a tasty, simple and cheap little snack to serve up to guests. They require only minimum preparation and are enjoyed by adults and children alike. They were well received by all our buddies with enough left over for Preschool lunchboxes the following day. I didn't get many photos of this recipe as the clock was ticking and our buddies were arriving any minute!
Chinese Style Chicken Nibbles
For the Marinade:
1 tablespoon oil
2 tablespoons rice wine
2 tablespoons sweet chilli sauce
2 tablespoons Chinese dark soy sauce
2 tablespoons caster sugar
1 knob of ginger - finely chopped
2 cloves of garlic - crushed
1 kg chicken nibbles - that's both joints of the wing, but not the tip end
1 tablespoon oil for greasing the lined oven tray
Mix the marinade ingredients in a large bowl. Toss the chicken nibbles in the marinade. Cover the bowl with plastic wrap and refrigerate for 2 to 3 hours.
Preheat the oven to 200 deg. C.
Place the nibbles onto the greased and lined tray. Leave a good sized gap in between each nibble so they brown evenly during cooking.
Bake for 20 minutes or until the juices run clear or the internal temperature of the chicken reaches at least 75 deg. C.
Serve up in a bowl with plenty of serviettes and a plate for the bones. Happy days!
